We’ve had a terrific summer so far.

Great fun with friends and family, sleepovers, parties, weekend getaways, and of course amazing food. Probably a little too much food, and not always the healthiest. There is just something about summer that makes healthy eating just a wee bit more difficult.

S’mores, hot dogs, burgers on the grill, and LOTS of ice cream. It’s all so good, but with school just around the corner, it’s time to get serious about  healthier eating habits.

Muffins are a staple for busy school mornings. They’re easy to prepare,can be made the night before, and who can resist a homemade muffin first thing in the morning. A lot of muffins are basically just a cupcake without the frosting, leading to a mid-morning sugar crash. I’ve got NO time for that.

These muffins are wheat free, low in sugar, packed with protein from the peanut butter, and the fat {the good kind} from the avocado keeps you feeling  fuller longer.

Even better than that, they can be whipped up in a blender jar {if you have a high power blender} or a food processor. Just dump in all the ingredients, blend, and bake. You can have them ready in under 20 minutes, can’t beat that can you?

I love anything mini, so we made mini muffins and studded the top with a few chocolate chips before baking. With fruit and some yogurt you’ve  have got a seriously healthy breakfast or afternoon snack.

I used all natural peanut butter and sweetened the muffins with honey, but use whatever you already have at home. They have an intense chocolate taste and are only mildly sweet; if you prefer a sweeter muffin use more honey or sugar, but we loved them as is even the kids.  Charlie even ate one last night for dessert. I just love a food that multitasks.

Chocolate Peanut Butter Blender Muffins {with avocado}

Yield: 16 mini-muffins


  • 1 cup of peanut butter
  • 2 eggs
  • 1 medium sized ripe avocado
  • 1/3 cup of unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 2 Tbsp honey


  • pre-heat the oven to 350 degree
  • spray muffin pan with baking spray {I love using coconut oil}
  • place all of the ingredients in the jar of a blender or bowl of a food processor
  • blend/process until smooth {batter will be thick}
  • drop by 1 Tbsp. into each muffin tin
  • top with a few mini chocolate chips {optional}
  • bake 8 - 10 minutes
