Chocolate Panforte


Fruit Cake

Probably the most cliche of all hostess gifts.

However, not all fruit cake is created equal.

I have been making this chocolate panforte for years.

Basically, it’s a chocolate fruit cake full of nuts and cherries, and it is delicious.

Certainly nothing like the traditional fruit cake that comes to mind.

{you know the one that winds up in the trash 100% of the time}

I first started making it to take to my in-laws for Christmas dinner.

My father-in-law, who NEVER eats sweets, actually ate some…

and LOVED it….

and has requested one every year since.

It was such a hit that it has become my favorite holiday hostess gift.

This year, I’m switching it up just a bit,  replacing the brandy with Kahlúa Hazelnut Liqueur

 

Chocolate Panforte

Ingredients

  • 3/4 cup of hazelnuts {skins removed}
  • 1/2 cup of dried cherries
  • 2 tbsp of Kahlúa Hazelnut
  • 3/4 cup of unsweetened chocolate {chopped}
  • 1/4 cup of bittersweet chocolate {chopped}
  • 1 cup {plus 1/2 tbsp} flour
  • 1 1/2 tsp cinnamon
  • 2/3 cup honey
  • 2/3 cup brown sugar
  • 1/2 tsp cocoa powder

Instructions

  • brush a 9 inch springform pan with butter, and fit the bottom with a circle of parchment - also butter the parchment
  • combine the nuts, cherries, and chocolates, and Kahlúa in a bowl
  • in a saucepan combine the honey and brown sugar, bring to a boil, reduce the heat, and simmer for 2 minutes
  • Pour the honey over the chocolates, and stir until combined
  • Fold in 1 cup of flour, and pour into the pan
  • With wet hands {it is VERY sticky} , press into an even layer
  • Combine the remaining flour, the cinnamon, and the cocoa, and sift over the cake
  • bake @ 300 for 30 minutes
  • allow the cake to cool and then brush off the flour/cocoa

Dessert needs a drink right…

Kahlúa and hot chocolate is delicious, but Kahlúa Hazelnut and hot chocolate is out of this world.
Simply:

1 part Kahlúa Hazelnut

5 parts hot cocoa

whipped cream

{a few crushed Reese’s doesn’t hurt}

Homemade Hot Cocoa Mix and a bottle of Kahlúa make a great gift basket as well.
