When things get busy it is so easy to fall into poor diet habits. Eating out more, buying more convenience foods. January is the perfect time for an overhaul, and the natural foods section at Kroger makes eating clean and simple a breeze.

As much as I love a complicated, fancy recipe, these are best kept for weekends or special occasions. Weekdays our menu includes a lot of simple easy meals. Whole wheat pasta with steamed veggies, lean proteins, and loads of fresh veggies and fruits.

Even breakfast no matter how little time we have in the morning can be healthy and delicious. This chocolate covered strawberry overnight oatmeal smoothie is made the night ahead; these are my favorite recipes for school mornings. A quick whirl in the blender before serving, and you can have a delicious breakfast on the table instantly. And it’s chocolate, what kid doesn’t want to have chocolate for breakfast?

Ingredients:

  • 1 cup of Silk Dark Chocolate Almond Milk
  • 1/2 cup SO DELICIOUS coconut milk yogurt (vanilla or strawberry)
  • 1/2 cup rolled oats (I used gluten free oats)
  • 1 cup of frozen strawberries
  • chopped chocolate and sliced strawberries for topping (optional)

Directions:

  • place ingredients in the jar of a blender, blend until smooth, cover blender jar and chill overnight
  • just before serving, pulse a few times in the blender, pour and top with chocolate and extra berries
