Chocolate and Brown Butter Madeleines

So it seems that the chocolate chunk cookies I made the other day

have disappeared.

With two days until the kids spring break starts,

  {insert happy dance here}

I found myself in need of a lunch box treat.

{silly me I thought the cookies would last through the week}


While chocolate chip are hands down the favorite cookie in the house,

madeleines come a close second,

and yet I rarely ever make them.

I’m not sure why because they are so easy.

With a full schedule

and a lingering migraine,

I still was able to get a batch finished before afternoon pickup.

Chocolate {brown butter} Madeleines

~recipe from Martha Stewart

1/2 cup butter

3 eggs

1/2 cup sugar

2 tbsp brown sugar

1 cup of flour

1 1/2 tsp baking powder

1/4 cup of cocoa powder

dash of salt

1/4 tsp vanilla

butter {or spray with cooking spray} your madeleine pan

in a small saucepan melt the butter over medium heat,

cooking until the butter begins to brown

strain off the solids and set the melted butter aside

whisk together the eggs and sugars until light

{about 5 minutes}

stir in the flour, baking powder, cocoa powder, salt, vanilla,

gradually stir in the melted butter

{be careful not to over mix}

spoon the batter into the molds

bake @325 for 10 minutes

cool slightly and remove from the pan

**these are definitely BEST when eaten on the first day
