this has been the theme in blogland,
and while I am not a fan of cake,
I am a fan of carrot cake.
In fact, I love carrot cake.
SO… I have been dreaming of carrot cake for weeks now.
I’d really like to be eating carrot cake.
But then, every time I walk into a store,
I am reminded
over
and
over again…
gasp
it’s bathing suit season
how can I possibly enjoy my cake with this little bit of info swirling about my head.
I thought I would trick myself with granola
that tastes like carrot cake,
because unless the
muumuu becomes fashionable,
I don’t see much cake in my near future!

Ingredients
- 2 cups of rolled oats
- 1 cup of unsweetened shredded coconut
- 1/2 cup finely grated carrots
- 1/4 cup of coconut oil
- 1/4 cup of maple syrup
- 1/2 cup of brown sugar
- 1 tsp vanilla
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1/4 tsp ginger
- 1/4 tsp nutmeg
Instructions
- combine the oats, coconut, and carrots and set aside
- in a small saucepan combine the oil, syrup, and brown sugar
- bring to a boil over med. heat
- once melted, stir in the vanilla and spices
- pour the liquid ingredients over the dry ingredients
- mix until thoroughly combined
- spread on a parchment lined baking sheet
- bake @325 for 30 minutes
- stir the granola, and return to the oven for 15 minutes longer
- watch for burning
- once completely cool, you can add in raisin/nuts{optional}
- store in an airtight container

My plan is to stay as far away from the water as possible…that way I don’t have to put on a swimsuit. I eat way too many sweets to even think about swim suit season…can I join you for that bowl of ice cream with a side of tears? The granola looks awesome. I love carrot cake so I know I would absolutely puffy heart love this granola!!!
Great pictures Heather! You had to go and remind us of bathing suit season! I’ve been trying to live in a bubble as far as that goes. I pretend don’t see them at Target! This is some of the best granola Heather!

Just wondering if you know how long this receipe will keep after it’s made. Do you need to keep it refridgerated? I assume it should be kept in an air tight container as well?
I had ours for well over two weeks – I did not have it in the fridge,but yes certainly in a sealed container.
This is baking in the oven right now and smells divine! We’ll be adding a few yogurt-covered raisins in place of cream cheese frosting. =)
