Baked Potato Chips | Buffalo Style

The end of that list can sometimes make the beginning of the list very difficult. Those kale chips that were so delicious  Tuesday afternoon, are not so much when everyone else at the football party is chowing down on  fully loaded nachos.   Trust me, I know all too well.

Buffalo Style Baked Potato Chips

Potato chips may not be as healthy as those kale chips, but when baked and not fried, they certainly are a lot better  than the original.  Spiced up with some Buffalo sauce,  and they are down right party worthy.

Buffalo Style Baked Potato Chips

Ingredients

  • 4 large russet potatoes
  • 2 Tbsp olive oil
  • 2 Tbsp Frank's Red Hot Buffalo Wing sauce
  • 1/2 tsp salt

Instructions

  • pre-heat the oven to 450
  • scrub potatoes, you can peel them, but I prefer skins on
  • thinly slice potatoes 1/8 - 1/4 inch thick {a mandolin makes this much easier}
  • toss the slices with the olive oil, hot sauce, and salt
  • arrange baking racks on baking sheets
  • spread potatoes out on the racks in a single layer - try not to over crowd
  • bake at 450 for 20 - 25 minutes {watch them towards the end so the chips don't burn
  • {you will have two baking sheets/batch, and about two batches of chips}
  • allow the chips to cool completely on racks before storing
