Brownie Batter Waffles with Strawberry Syrup

With the heat we’ve been experiencing here in northern California,
we have been eating a lot of salad for dinner.
Caesar with shrimp
with salmon
with chicken
{you get the picture}
I love salad
I really could it eat it every night during the summer.
the kids…
well that is a different story altogether.
It’s still hot,
and I’m still craving salad,
but tonight I wanted to give the kiddos something they could not complain about
breakfast for dinner
{a big hit in my house ALL the time}
even better than that,
I made brownie batter waffles
with strawberry syrup
{if there’s fruit it’s healthy right}
watch out…
I’m thinking that
BEST MOM mug
is mine this year.
Ingredients
- For the waffles:
- 1/2 cup of flour
- 1/2 cup of cocoa powder
- 1/2 cup of almond meal
- 1 tsp baking powder
- 1/2 tsp salt
- 2 eggs
- 1/4 cup of sugar
- 1/4 cup of coconut oil {melted}
- 1 tsp vanilla
- 1/2 cup of milk
- For the syrup
- 2 cups of berries quartered
- 1/2 cup of sugar
Instructions
- combine the flour, cocoa, almond meal, salt, baking powder
- whisk together the eggs and the sugar
- mix in the oil and vanilla
- gradually stir in the dry ingredients
- alternating with the milk
- lightly oil the waffle iron
- use 1/4 cup of batter for each waffle
- For the Syrup:
- Bring the berries and the sugar to a boil
- lower the heat
- cook stirring occasionally
- until the syrup begins to thicken
- {about 8 minutes}
The waffles are not over the top sweet,
that is until you add the syrup,
so I cut the sweetness with some creme fraiche,
but mascarpone or whipped cream would be just as nice:)

I love baking brownie mix in my waffle iron! It’s one of my favorite ways to make waffles!
they are SO yummy!
Love this idea, (and have tried extra oil in the batter and on the iron) but have had a problem with the brownie batter sticking to the waffle maker.
Any tips??
I use non-stick spray or butter, and don’t ever have trouble with them sticking – you may need to spray in between each batch you cook
