Here we are, skinny Wednesday week 2.  In case you missed last Wednesday’s post, I’ve teamed up with a few blogging friends all working towards better eating and exercise habits.  Food blogging is NOT kind to the waistline, and we are helping one another to do something about that.

My first “skinny” was dessert; a delicious {if I may say so} apple pie baked in the apple.

For me however, breakfast can make or break my healthy eating for the day.I love breakfast, but some days I get so busy that I grab something without giving it much thought.  A breakfast loaded with fat and sugar just sets up a days worth of unhealthy  eating.  BUT, I noticed that the days I made good choices, that was how it went for the rest of the day as well.

I’m not saying this is how it is for everyone, but it is that way for me, so I know that breakfast needs to be a good one if I’m going to be successful  with my healthy eating plan.

I also tend to get in a rut…eating the same things over and over. lately, it’s been yogurt.  That is what I have been eating every morning for a LONG time, and I am getting bored.  When I get bored, my eyes start to wander.  NOT a good thing when you are hungry.

Time for a change in the breakfast menu.

Quinoa is great for more than just dinner, and it’s quick if you happen to have some leftover. You simply need to warm some milk, add in the leftover quinoa, add some fruit, nuts, and you are done.

I didn’t have any leftover to work with, but I made a double batch, so tomorrow’s breakfast is ready and waiting for me.

 

Breakfast Quinoa

Ingredients

  • 1 cup of milk {I used unsweetened Almond}
  • 1/2 cup of quinoa {rinsed}
  • 1 tbsp sugar
  • 1/2 tsp cinnamon
  • apple slices

Instructions

  • In a medium saucepan, over moderate heat, bring the milk to a simmer
  • stir in the quinoa, sugar, and cinnamon
  • bring to a boil, reduce the heat, and simmer for 30 minutes
  • serve with fresh fruit, and additional milk if needed
  • makes 2 servings

I LOVE quinoa, but I was really surprised at how good it was for breakfast too, and it kept me full all morning {and eating healthy for the rest of the day}
