I always grocery shop with a list. I plan meals on Sunday. Make a detailed list including breakfast, lunch, even snacks. I have another list for blog related recipes. I try to make sure I only need to shop once a week because those little side trips for one or two items always tend to be pricey.

So then why is it at the end of the week my produce bins are still full?

Wasting food is something I try never to do. Especially when it comes to berries. They are far too precious to ever let go bad. Last week I may have gone a tad overboard in my strawberry buying. They just looked So good!

I had lofty expectations that included strawberry bagels, strawberry shortcake for dessert, and a coffeecake. But soccer, an ortho appointment, an unexpected science test, and a very unwelcome migraine changed those plans. So along with some very ripe bananas on the counter, I had some very ripe strawberries.

When you have bananas, strawberries, and add some chocolate chips and nuts, Β you end up with Β one mighty tasty loaf of banana split bread. Ice cream not needed, but I bet a scoop on top would be delicious.

  • 3 ripe bananas, well mashed
  • 2 eggs, well beaten
  • 2 cups white whole wheat or whole wheat pastry flour
  • 1/2 cup sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 cup of diced strawberries
  • 1./2 cup chocolate chips
  • 1/2 cup chopped nuts
  • chocolate gananche for topping (optional)


  • preheat oven to 350 degrees
  • butter a loaf pan
  • in a large bowl mix the bananas with the eggs
  • add the flour, sugar, salt, and baking soda
  • gently fold in the berries, chocolate chips, and nuts
  • pour batter into the prepared loaf pan and bake for 1 hour
  • cool loaf 5 minutes, remove from the pan and cool on a rack
  • to make the ganache heat 4 ounces of heavy cream over medium-low heat (it does not need to boil, just get hot)
  • in a heat proof bowl, pour the cream over 4 ounces of chopped chocolate, allow to sit for 1 minute, and then whisk until smooth
  • pout over the loaf, slice and serve

This banana split bread is a great way to use up over-ripe fruit, makes a terrific snack any time of day, and is perfectly packable.(7 weeks of lunch packing left and counting)
