String cheese is something that you will ALWAYS find in my fridge.

always, always,always

I buy it even when it’s not on my list, so often there is a LOT of string cheese in my fridge.

That’s okay because my kids LOVE cheese almost as much as their mother does, and I know it will never go to waste.

Something that does go to waste…the tortilla chip crumbs at the bottom of the bag.

I save a lot of things…

ziploc bags

cereal bit and pieces {they are GREAT in pancakes  and yogurt}

bread ends {GREAT croutons}

but chip crumbs usually just find their way to the trash.

But then I got an idea…

much like the baked mozzarella cheese sticks  that the kids ask for ALL the time.

{baked} Cheddar Cheese Sticks


  • 12 cheddar cheese sticks {frozen}
  • 1 egg - lightly beaten
  • about 1/4 cup of flour {seasoned with salt and pepper}
  • 3/4 - 1 cup of tortilla chip crumbs {pulse in a food processor to make the crumbs more uniform sized pieces}
  • salsa - for dipping


  • once your cheese stick are thoroughly frozen, dip them in egg
  • then dredge each stick in flour
  • dip a second time in the egg
  • and finally coat with the chip crumbs
  • bake on a parchment lined baking sheet
  • @400 for 3 - 4 minutes, and then flip {cooking another 3 - 4 minutes}
  • serve with salsa for dipping


**these are BEST eaten right after baking

I made a quick salsa with some fresh tomatoes, a  1/2 jalapeno, 1/2 onion, and lime juice {a few pulses with the food processor} , and we were in snack heaven.

Plus, now I have a use for all those crumbs, and Charlie makes a LOT of them.
