Bacon and Egg Puff Pastry Breakfast Tart

Puff Pastry Tart for Father’s Day Brunch
Father’s Day is only a few days away.
I’ll admit, I’m not the best at holidays like these, and usually end up planning at the last minute. Gifts and cards I can handle, but in the past my Father’s Day menu usually includes just throwing some kind of meat on the grill, and breakfast I don’t usually do much of anything special.
Ian is an early riser, a VERY early riser, and typically by the time we all get up, he’s already eaten something.
Not this year. Stella and I have been working on a menu that any father would be sure to love, and it includes this amazing puff pastry breakfast tart with bacon and eggs. It may be cliche, but bacon really does make everything better, even puff pastry.
I first saw this tart on the cover of The Fresh Market store circular in South Carolina. I knew I had to try it, and it was so gorgeous it definitely called for a special occasion.
Father’s Day it is.
Ingredients
- 1 sheet of puff pastry {thawed}
- 3 ounces of Mascarpone
- 1 Tbsp finely diced chives
- 6 strips of bacon {cooked}
- egg wash {1 egg beaten with 1 Tbsp milk}
- 6 eggs
- salt and pepper
Instructions
- pre-heat the oven to 425
- on a lightly floured surface roll the puff pasty into a rectangle about 1/4 inch thick
- with a sharp knife cut a "border" of about 1/2 inch around the entire rectangle
- prick only the center of the rectangle with the tines of a fork
- spread the mascarpone evenly in the center
- sprinkle with the chives, and top with bacon
- brush the edges with the egg wash
- bake tart for 10 minutes
- crack the eggs onto the tart, season to taste with salt and pepper
- return to the oven for another 10 minutes {or until the eggs are done to your preference}
- sprinkle with additional chives {optional}
The kids LOVED our test tarts so much I can see this becoming a regular breakfast item, and dad will feel so special with this incredible meal.
It may look impressive, but it really is a breeze to put together {but you don’t have to tell dad that}.

Fried eggs are really delicious on cinnamon raisin bread. I bet you could incorporate cinnamon/raisin into the puff pastry as another variation and it would rock…
