Well let me tell you, it has been a WEEK.

I’m supposed to be getting  ready to head to the beach for a little r&r; the kids have been SO excited.  They both had BIG projects to get done, so that came first.  Then, I was hoping to get caught up on some blog work, and once that was taken care of I could work on the shopping and packing.

And then the phone rings…I’ve learned that when it rings first thing in the morning, and it’s school, it is NEVER good news.

so I spent the day waiting at the doctors office,and then waiting for x-ray,  then waiting for results, and waiting for the swelling to go down, which it did not do until today.  Trust me when I tell you I don”t wait well….at all.

That’s okay I still had another day until vacation.  I don’t like waiting until the last minute to shop and pack, but it is what it is.

But little B {who we just had spayed} seems to have an infection around her incision. Off to the vet. At least he didn’t make us wait too long, but B has a LONG list of instructions that I’m sure the pet sitter is NOT going to enjoy.

I’m thinking that the beach gods are not wanting me to have a relaxing  weekend.

I’m also thinking that cookies will help

Apple Pie Snickerdoodles

Apple Pie Snickerdoodles

Ingredients

  • 1/2 cup of butter {softened}
  • 1 1/2 cups of brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 3/4 cup of apple butter
  • 2 1/4 cups of flour
  • 1/2 tsp salt
  • 1 tbsp corn starch
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • For the topping:
  • 1/3 cup of sugar
  • 1/2 tsp apple pie spice
  • 1/2 tsp cinnamon

Instructions

  • cream together the butter and brown sugar
  • add the eggs one at a time scraping the bowl after each addition
  • mix in the vanilla and the apple butter
  • combine the flour, corn starch, salt, baking powder, and cinnamon
  • add to the butter mixture and mix
  • cover the dough with plastic wrap and chill for at least 60 minutes
  • pre-heat the oven to 350
  • combine the 1/3 cup sugar with the cinnamon and apple pie spice
  • scoop 1 tbsp size balls and roll in the cinnamon/sugar
  • bake for 10 minutes {rotating sheets half way through baking time}
  • cool on sheet for 2 minutes
  • finish cooling on rack

Believe me when I tell you, I am NOT a patient person, but you WILL want to chill the dough, or the cookies will spread, and no one wants a thin snickerdoodle.

Cookies pretty much make everything better, but just in case, I’m packing plenty of wine.
