Apple Cider Funnel Cakes

Well, now I’ve done it.

I made funnel cakes.

There’s NO going back.

No longer do I need to wait for the fair,
or a trip to an amusement park.

This could get dangerous

and… seeing how it is fall
I added cider
and my favorite apple pie spice
and cinnamon mixed with the powdered sugar

Not sure if I should be proud of this fact, but I am getting GOOD at frying.

Apple Cider Funnel Cakes:
~recipe adapted from The Pioneer Woman

2 cups of flour
2 eggs
3/4 cup milk
3/4 cup apple cider
1 tsp baking powder
1 tsp apple pie spice
1 tsp vanilla
1/2 tsp salt

combine the dry ingredients
add in the eggs
mix until well blended
{you may need to add just a bit more liquid}
should look like pancake batter

heat about 2 inches of oil in a deep skillet
when the oil is  hot, add the batter to your funnel or a squeeze bottle
hold the opening VERY close to the oil or your batter won’t stay together
{make smal circular motions}
they cook extremely fast
using tongs flip over to cook the other side
not much longer than one minute
drain on paper towels

dust with powdered sugar mixed with 1 tsp cinnamon
