The official start of the holiday season.
I am so excited for the holidays this year. I love it every year, but this year we’re headed back to NY for Christmas with my family. We spent the weekend shopping for winter coats, hats, gloves, scarves, and boots that do more than just look cute. Thank goodness for the outlets; we got absolutely everything we needed and of course a few fun extras.
This week we will celebrate Thanksgiving twice. We get to spend the holiday at home, just the four of us, and then on Saturday we head to the in-laws for another family feast. I found two fantastic vegetable dishes to bring to our family dinner, and luckily my mother in law takes care of the pies because you know how I feel about crust.
Even though we will get our fill of pie on Saturday, I didn’t want our meal on Thursday to be without dessert. Pie is really out of the question, unless Charlie decides to try making one (he has to make a pie for his foods and nutrition homework) Stella was not really excited about eating a “charlie” pie, so my contribution along with chocolate pecan pie bars will be this apple berry crisp.
I love apple pie, and I love berry pie, and the two together with a delicious crisp topping is a winning combination for sure. Topped with a scoop of vanilla ice cream, I may have just found my new favorite way to get out of fighting with crust, and I am SO thankful for that!
- for the crisp -
- 3/4 cup flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 stick of butter, cold, cut in to small pieces
- 1 cup of rolled oats
- for the filling -
- 2 lbs apples (I used granny smith and fuji) about 4 medium sized
- 2 cup of raspberries ( or a mix of berries)
- 1/2 cup sugar
- 2 Tbsp flour
- 1/2 tsp vanilla
- stir together the flour, sugars, cinnamon, and salt
- cut in the butter, until you have a coarse meal
- stir in the oats, and keep in the freezer while you prepare the filling
- heat oven to 375 degrees
- peel, core, and thinly slice apples
- toss apples with the berries, sugar, flour, and vanilla
- place apples in a 2 qt baking dish, top with crisp topping
- bake at 35 degrees for 50 minutes
- crisp is best served still warm
