You are probably tired of hearing about my fussy eater. Trust me, I know it gets old. I live it every. single. day. What she eats one day is suddenly off limits the next.

Cover it in cheese, and there is a good chance it will get eaten. Take these enchiladas for example.  Typically, they will NOT eat them. Charlie and Stella are more the bean and cheese burrito type. BUT…fill them with chicken covered in a cheese sauce, and top with more cheese sauce.  Now you have a meal that they cannot pass up. To make them SUPER easy, I used Campell’s Cheddar Cheese soup. I added a can of tomatoes with diced chilies for just a bit of heat. You just have to mix, pour, and bake. The enchiladas can even be put together ahead of time and just baked when you are ready. Making this a perfect weeknight meal. Easy Chicken and Cheddar Enchiladas


  • 8 flour tortillas
  • 2 large chicken breasts {cooked and shredded}
  • 2 cans of Campbell's Cheddar Cheese Soup
  • 1 can of diced tomatoes and chilies


  • pre-heat the oven to 350 degrees
  • combine the two cans of soup {do not add milk} with the diced tomatoes
  • mix half of the cheese sauce with the chicken
  • divide the chicken evenly among the tortillas {placing it along one edge}
  • roll up the tortillas
  • place the enchiladas {seam side down} in a baking dish
  • cover with the remaining cheese sauce
  • bake @350 for 20 minutes
  • serve with your favorite toppings - salsa, sour cream, avocado slices, the works
  You could definitely leave out the chilies, or add beef, use corn tortillas in place of the flour. Whatever suits your kids the best.  We loved them, and I cannot wait to make some of the other recipes I found.  That is one wise kid for sure.
